Because shops often write its name with a homophone that is also an old name for Shandong, the 2011 Taiwan edition of the Michelin Green Guide said the dish came from Shandong, and Taipei's city government held a press conference asking for a correction.

Chopped pork belly is stir-fried with shallots, then braised in soy sauce with sugar, rice wine and pepper until the fat melts into the sauce, and spooned over a small bowl of rice.

Why it's made this way: It is one of the most common rice dishes in Taiwan. The north favors a greasier minced-pork sauce, while in the south the same name can mean a slab of braised belly over rice.
