Lhasa's big summer festival, Shoton, takes its name from the Tibetan words for 'yogurt' and 'banquet'.
Thick, very sour yogurt made from yak milk is sold by the scoop from street stands and small shops, and topped with sugar, honey, raisins or fruit.
Why it's made this way: Yogurt is a Tibetan staple and the signature food of the Shoton festival, when it was traditionally offered to monks; in Lhasa it is sold around Barkhor Street.
