The ice cream is churned in a copper pan (paila) set into a bed of ice and salt, and paileros in Pasto's main park still work the mixture entirely by hand with a wooden spoon rather than any machine.
Fruit pulp, sugar, and a little water are poured into a wide copper pan embedded in crushed ice mixed with rock salt, then hand-stirred continuously until the mixture freezes into a dense, fruity ice cream. Vendors sell it by the scoop from carts parked in Pasto's central plazas.
