Cholado

Cali's cholado vendors traditionally crown the cup with a popsicle stuck straight into the shaved ice, turning the dessert into its own edible spoon-and-straw combo.

Shaved ice is layered with chopped mango, papaya, pineapple, and banana, then drenched in fruit syrup, condensed milk, and a dusting of powdered cheese or sprinkles. Vendors build it to order in tall plastic cups from carts parked along Cali's parks and beaches.

Why it's made this way: Cali's year-round heat and position amid Valle del Cauca's fruit-growing valleys made iced fruit desserts a neighborhood fixture, with the city's Versalles district especially known for its cholado stands.
