The finished cup is usually crowned with a crisp wafer cookie and a cherry, and customers often pick their own fruit and syrups.
Shaved ice is layered with chopped mango, papaya, pineapple, and banana, then drenched in fruit syrup and condensed milk and topped with shredded coconut and a wafer cookie. Vendors build it to order in tall plastic cups from carts parked along Cali's parks and streets.
Why it's made this way: Cali's year-round heat and Valle del Cauca's fruit-growing valleys made iced fruit desserts a neighborhood fixture, and nearby Jamundí is widely considered cholado's home.
