The lamb's flavor comes largely from what it eats — Cres Island sheep graze on salt-sprayed, herb-covered scrubland, seasoning the meat before it ever reaches a spit.

Whole lambs from the island of Cres are salted simply and slow-roasted on a spit over embers until the skin crackles, then carved and sold by the plate at island festivals and market-day feasts.

Why it's made this way: Cres's dry, herb-covered pastures and sea winds are credited with giving the island's lamb a distinctive flavor, making it one of Kvarner's most prized and specifically place-based meats.
