Šurlice (Krk Island Pasta)

Each tube is still rolled by hand around a thin rod, one at a time — no machine on the island has ever fully replaced the technique.

Short tubes of egg pasta are hand-rolled around a thin wooden or metal rod, then boiled and tossed with goulash-style meat sauce or seafood. It's native to the island of Krk and served at tavernas and island fešte across Kvarner.

Why it's made this way: Šurlice developed on Krk in relative isolation from the mainland, giving it a shape and name distinct from similar hand-rolled pastas elsewhere on the Croatian coast.
