It's traditionally cooked outdoors over an open fire right on the riverbank, using fish pulled from that same river a few hours earlier.
Freshwater fish from the Danube or Drava rivers is simmered for hours in a heavily paprika-spiced broth until it turns a deep red, then ladled hot over fresh noodles. Slavonian riverside festivals and market-day cook-offs are built around enormous shared cauldrons of it.
