The name comes straight from German — gemischt, 'mixed' — a linguistic leftover from the Austro-Hungarian era that Zagreb locals still order by the half-liter on hot afternoons.
Gemišt is white wine mixed with sparkling mineral water, typically in equal parts, served in a tall glass over ice at Zagreb's outdoor cafés and market stalls. It's light, fizzy, and low enough in alcohol to sip through a long lunch.
Why it's made this way: Continental Croatia's white-wine growing hills around Zagreb, combined with the city's Austro-Hungarian café culture, made diluting wine with mineral water an everyday Zagreb habit rather than a niche cocktail.
