Denmark's most beloved akvavit was created by a Swedish chemist who moved to Aalborg and reinvented Danish spirit-making from scratch.

Aalborg Taffel Akvavit has been distilled in Aalborg since 1846, flavored with caraway and a touch of citrus and fennel, using a recipe that has barely changed since. It's traditionally served ice-cold in small glasses alongside pickled herring and open-faced sandwiches.

Why it's made this way: Aalborg became Denmark's akvavit capital in the 19th century and the name is still shorthand for the country's defining spirit.
