Matembele (Sweet Potato Leaves with Peanut)

The leaves come from sweet potato plants grown in the black volcanic soil around Mount Nyiragongo — the same active volcano that repeatedly threatens Goma also enriches the farmland that feeds it.

Tender sweet potato leaves are chopped and simmered with ground peanuts, onion and palm oil into a soft, nutty sauce, ladled over rice or fufu as a lighter alternative to North Kivu's cassava-leaf dishes.

Why it's made this way: North Kivu's fertile volcanic highlands around Goma made sweet potato one of the region's most reliable crops, and cooking the leaves alongside the tubers meant almost nothing from the plant went to waste.
