Lake Kivu is one of only a handful of lakes on Earth known to hold deep reserves of dissolved methane and carbon dioxide gas — yet its surface waters still supply Goma's markets with fresh tilapia every single morning.

Whole tilapia is scaled, scored and grilled over charcoal or simmered in a rich tomato-and-onion sauce, then served with rice, fufu or boiled plantain at lakeside restaurants and market stalls around Goma's harbor.

Why it's made this way: Fresh fish arriving by boat at dawn made grilled tilapia the default lakeside meal in a city that otherwise depends on trucked-in produce from the Masisi highlands, keeping it one of the few ingredients Goma sources almost entirely from its own doorstep.
