Kinkole, the Congo River fishing port on Kinshasa's eastern edge, has grown into an entire open-air restaurant strip built around this one plate of braised fish and grilled plantain.

Whole river fish is scored, seasoned and braised over open charcoal at riverside grills in Kinkole and Maluku, then served with grilled plantain and a side of chikwangue, eaten by hand at open-sided bistros overlooking the water.

Why it's made this way: Kinkole is where Congo River fishing pirogues land their catch closest to the capital, and generations of riverside cooks built a weekend food-outing tradition around grilling that fish the same day it comes off the water.
