The Wagenia fishermen at Boyoma Falls catch these perch without nets or hooks, using giant woven baskets lashed to wooden scaffolding built directly into the Congo River's rapids — a technique unchanged for generations.
Whole Nile perch, known locally as capitaine and caught in the rapids at Boyoma Falls just outside Kisangani, is scored, seasoned and grilled whole over charcoal, then served with rice or grilled plantain.
Why it's made this way: The Wagenia people's basket-trap fishing at the Boyoma Falls rapids has supplied Kisangani with capitaine for generations, and grilling it whole and simply lets the freshness of a fish caught hours earlier speak for itself.
