The fish is salted and sun-dried before it ever touches the pot — a preservation step that lets Congo River catch survive Kisangani's humid climate long enough to reach inland market stalls days later.

Dried, salted fish is simmered with cassava or sweet-potato leaves in palm oil until the fish softens and the greens turn deep green, sold at street stalls near Kisangani's cathedral market and ladled over rice or fufu.

Why it's made this way: Salting and drying fish let Congo River catch travel from the riverside all the way into Kisangani's inland neighborhoods without refrigeration, keeping this stew a daily fixture at the city's street-side canteens.
