Chisense (Fried Dried Lake Silverfish)

These silverfish are so abundant that they alone make up roughly two-thirds of the total fish catch hauled from Lake Mweru-Luapula on Katanga's southern border.

Tiny silverfish are sun-dried on lakeshore racks, then pan-fried whole with onion, tomato and chili until crisp and salty. Sold by the cupful in Lubumbashi's markets, they're eaten as a crunchy side alongside bukari and greens.

Why it's made this way: Dried lake silverfish travel and store far better than fresh fish across a landlocked, poorly-connected province, making chisense one of Katanga's most dependable everyday protein sources long before refrigerated transport reached the copperbelt.
