Mbika na Mbinzo (Pumpkin-Seed Porridge with Caterpillars)

Mbika, the porridge base, isn't made from any grain at all — it's flour ground from dried pumpkin and squash seeds, a starch unique to Central African cooking.

Dried edible caterpillars, gathered from the forests around Mbandaka and neighboring Bikoro, Ingende and Basankusu, are simmered into a thick porridge made from ground, dried pumpkin-seed flour with onion, tomato and chili — a Mongo-community staple sold across Équateur's markets.

Why it's made this way: The Mongo people of Équateur Province built their cuisine around what the surrounding rainforest reliably provides — seasonal caterpillars for protein and foraged pumpkin seeds ground into flour — turning two forest byproducts into one of the region's defining dishes.
