Rosero Cuencano

A proper rosero can contain a dozen or more ingredients — barley, corn, pineapple, naranjilla, cinnamon and cloves among them — making it closer to a drinkable fruit stew than a simple beverage.

Cooked barley and mote are combined with chopped fruit, spices and sugar into a thick, chilled, lightly fermented drink. Vendors in Cuenca sell cups of it especially around the Corpus Christi festival.

Why it's made this way: Rosero is historically tied to Cuenca's Corpus Christi celebrations, making it as much a seasonal ritual drink as an everyday refreshment.
