Hornado is a whole pig marinated in garlic, cumin, and spices, then slow-roasted until the skin turns deep golden and crackling. Market vendors carve it to order and serve it with llapingachos, lettuce, tomato, and a spicy salsa.

Why it's made this way: Once reserved for community celebrations in Andean towns like Otavalo and Ambato, hornado moved into everyday market life as urban demand grew.
