The dish was originally packed as a portable lunch for farm laborers to carry into the fields, wrapped so the banana leaf itself kept the rice warm for hours.
Rice, stewed chicken or pork and a boiled egg are wrapped tightly in a banana leaf into a compact bundle. Roadside stalls in rural Manabí sell them ready to grab and go.
Why it's made this way: The tonga's portable, leaf-wrapped design reflects Manabí's agricultural workforce and its practical approach to street lunches.
