The pairing is so specifically tied to this town that Salvadorans often call it "el chilate de Ahuachapán" nationwide, no matter who's actually selling it.

A hot, lightly spiced corn drink flavored with ginger, served alongside small deep-fried yuca dumplings drizzled in raw cane syrup. Ahuachapán's street vendors sell the pair together from carts near the central park.

Why it's made this way: Ahuachapán, tucked against the western highlands and coffee country, has carried this specific chilate-and-nuégados pairing as its signature street food for generations.
