Sonsonate's Sunday "dominguero" food market is so associated with this soup that many Salvadorans simply call it "sopa sonsonateca," regardless of where it's actually cooked.

A hearty soup built on simmered cow's foot, plantain, yuca, corn, cabbage, and squash in a light broth, seasoned with lime and mint at the table. Sonsonate's Sunday market cocinas sell it by the bowl from huge pots.

Why it's made this way: Sonsonate's weekly Sunday market is one of El Salvador's largest and oldest food gatherings, and it built its national reputation around slow-simmered cow foot soup.
