Sales of grilled beef spike so dramatically during San Miguel's massive November Carnaval that vendors set up temporary charcoal grills the length of entire city blocks just for the week.

Thin, well-seasoned beef grilled hot and fast over charcoal, served with fried plantain, rice, and a squeeze of lime. San Miguel's street grills fire up in the evenings, especially during Carnaval season.

Why it's made this way: San Miguel sits in eastern El Salvador's cattle country, and its enormous annual Carnaval turned grilled beef into the city's signature festival street food.
