In Harar it's traditionally sold only on Mondays and Thursdays to coincide with market days, and diners tear it apart by hand straight from a shared tray rather than eating it with injera.
Hanid is a whole leg or side of goat wrapped and slow-steamed for hours in a traditional earthen oven, often set near hot stones or a termite mound for gentle, even heat. The tender meat is torn by hand and dipped into a tangy tamarind-and-berbere sauce.
