Lovo

Photo coming soon

Lovo stones are heated until glowing in a fire pit, then the wrapped food is buried under leaves, sacks and earth; it's the standard centrepiece for weddings, church events and Christmas.

Lovo is Fiji's earth-oven feast: chicken, pork, fish and dalo (taro) or cassava are wrapped in banana leaves, laid over stones heated in a pit fire, and left to slow-cook under earth and leaves for a few hours.

Why it's made this way: Like other Pacific earth ovens, lovo developed as a way to cook large shared meals for whole communities without pots or ovens, using heat retained in stone.
