These crisp, spiced fritters are held together with nothing but gram flour and water, no egg needed, and they're often the first thing sold out at a Suva market food stall.

Sliced onion, potato, or spinach is dipped in a spiced gram-flour batter and deep-fried until crisp, then sold hot in paper bags at Suva's Municipal Market and roadside stalls across Viti Levu.

Why it's made this way: Bhaji came to Fiji with Indian indentured labourers from the late 19th century onward, and the gram-flour fritter recipe they carried with them became one of the most common Indo-Fijian snacks sold at markets today.
