Unlike the hot, buttery sauté, this version of reindeer is never cooked at all — it's cold-smoked over slow embers, then sliced paper-thin like a fine charcuterie.

Reindeer meat is salted, then cold-smoked for hours over smoldering wood at a low enough temperature that it never actually cooks, giving it a firm, deep-red, ham-like texture. It's sliced thin and sold as a snack at Lapland's markets and tourist stalls, often alongside cloudberries.

Why it's made this way: Cold-smoking let Arctic communities preserve reindeer meat through the dark winter months without cooking away its texture, turning a preservation method into a delicacy in its own right.
