This eggplant-dark sausage is made from fresh pig's blood and crushed rye groats, and Tampere is so proud of it that locals call it the city's culinary trademark.

Pork blood is mixed with crushed rye or barley groats and spices, stuffed into casing, and boiled or grilled until firm. Tampere's market hall and street vendors serve it hot on a sheet of paper with a generous spoonful of lingonberry jam.

Why it's made this way: Blood sausage was a practical way to use every part of a slaughtered pig, and Tampere's version, thickened with local rye groats, became distinct enough to become the city's signature dish.
