The smell alone can pull you across the square — almonds are roasted to order in cinnamon and sugar right in the cart, so the whole market smells like a bakery.
Raw almonds are slow-roasted in a rotating pan with sugar, cinnamon, and a little water until they caramelize into a crunchy, spiced shell. Vendors at Helsinki's Kauppatori scoop them hot into paper cones for market-goers to snack on while browsing.
Why it's made this way: The cart-roasted almond has become one of the signature smells of Helsinki's harbor market, a tradition shared with Christmas and holiday markets across the Nordics.
