Finland's oldest city is also its marzipan capital, with confectioners in Turku shaping the almond paste into miniature fruits and figures for well over a century.

Ground almonds are worked with sugar and a little egg white into a smooth, pliable paste, then hand-molded and painted into tiny fruit and animal shapes. Turku's market hall and confectionery shops sell it by the piece as a sweet, portable treat.

Why it's made this way: Turku's long trading history and old-world confectionery shops turned marzipan-making into a local craft, distinct from the mass-produced versions found elsewhere.
