Turku has held a herring market on the banks of the Aura River since 1636, making it one of the oldest recurring food markets in Finland.
Small Baltic herring are breaded and pan-fried whole until crisp, then served with rye bread and mashed potatoes or simply eaten by hand. Turku's riverside Silakkamarkkinat herring market sells them fresh from dozens of fishing boats each year.
