Traditional Norman meals once paused mid-course for 'le trou normand' — a shot of Calvados drunk to 'punch a hole' in the stomach and make room for more food.

Calvados is an amber brandy distilled from cider apples and aged in oak, made only in Normandy under strict AOC rules. It's drunk neat as a digestif, or splashed into dishes like sole normande.

Why it's made this way: Normandy's orchards produce France's finest cider apples, and when 19th-century vine disease crippled grape brandy production elsewhere, Norman distillers were ready with an apple-based alternative.
