It's traditionally cooked and served in the same small clay pot it's baked in, sealed enough that the pot arrives at the table still bubbling.

Kidney beans are slow-simmered with onion, herbs, and sometimes smoked meat in an individual clay pot until thick and rich, then served with a wedge of hot mchadi cornbread. Roadside taverns and market kitchens across Kakheti serve it as a quick, hearty meal.

Why it's made this way: Kakheti's fertile Alazani Valley farmland made beans and corn everyday staples, and the region's wine-country taverns turned lobio into a reliable, inexpensive dish to pair with local wine.
