Khachapuri is a bread boat filled with melted cheese, topped with a raw egg and a knob of butter stirred into the filling right before eating. Bakeries and street stalls across Tbilisi sell smaller, handheld versions and slices for eating on the move.

Why it's made this way: The boat shape linked to the Adjara region is said to echo the fishing boats along Georgia's Black Sea coast, with the egg yolk standing in for the sun — a design that turned a regional bread into a national symbol.
