Megruli Khachapuri

🧀
Photo coming soon

This version doubles down on cheese in a way even other Georgians consider extreme — it's filled with cheese like a standard round khachapuri, then topped with a whole extra layer of melted cheese on top of the crust.

A round of dough is filled with imeruli cheese, sealed, and baked, then topped with even more grated cheese that melts into a bubbling layer over the crust. Bakeries and market stalls across Samegrelo sell it whole or by the wedge.

Why it's made this way: Samegrelo's cuisine is known across Georgia as the boldest and spiciest, and Megruli khachapuri's extra cheese layer reflects the region's habit of pushing every dish further than its neighbors.
