The fish's Hungarian name literally means 'toothy one,' a nod to the rows of small sharp teeth that make it a fierce predator in Balaton's shallow waters.

Fillets of pike-perch, breaded and pan-fried until golden, served simply with a wedge of lemon and boiled or fried potatoes from stalls and small kitchens along the Lake Balaton shoreline.

Why it's made this way: Pike-perch has long been considered the prize catch of Lake Balaton, Central Europe's largest lake, and pan-frying it simply lets the delicate white fish speak for itself at lakeside eateries.
