The oldest written record of pálinka anywhere dates to 1572 — and it comes from Debrecen, giving the Hajdúság region a documented claim to Hungary's national spirit before anywhere else.
Debreceni pálinka is a clear, potent fruit brandy, classically distilled from plums or other orchard fruit grown on the Hajdúság plain around Debrecen. It's drunk ice-cold in small shots, unsweetened, with the pure fruit aroma meant to hit the nose before the first sip.
Why it's made this way: Debrecen holds the earliest documented mention of pálinka in Hungarian history, giving the Hajdúság region a genuine claim to being where the country's protected national spirit first entered the written record.
