Louis XIV of France reportedly called this golden dessert wine 'the wine of kings, the king of wines,' and it's made from grapes deliberately left to shrivel with noble rot.
Tokaji Aszú comes from the volcanic Tokaj-Hegyalja hills of northern Hungary, where botrytis-affected grapes are hand-picked berry by berry to make an intensely sweet, amber-colored wine. It was one of the first wine regions in the world to be formally classified, back in 1737.
Why it's made this way: The region's unique fog-and-sun microclimate encourages noble rot, giving northern Hungary a wine style found almost nowhere else on earth.
