Frittatina di Pasta

It's built from leftover bucatini or ziti bound in béchamel, meaning every frittatina is technically twice-cooked pasta hiding inside a fried shell.

Frittatina di pasta packs cooked pasta, béchamel, peas, ham, and provola into a squat cylinder, breads it, and deep-fries it until the outside shatters and the inside stays creamy. Naples' fried-food counters (friggitorie) sell it alongside arancini and other fritti.

Why it's made this way: It grew out of the same Neapolitan habit of frying leftovers into new street food, turning day-old pasta into one of the city's most popular fritti.
