The paper cone is part of the design — angled so oil drains to the bottom point, keeping the food at the top crisp instead of sitting in grease.

'O cuoppo piles a mix of lightly battered and fried small fish, shrimp, squid, or vegetables into a tall paper cone, meant to be eaten by hand while walking. Naples' street fryers scoop it hot straight from the oil.

Why it's made this way: It turned Naples' cheap, abundant small-fish catch into a fast, portable meal for a busy port city, no plate or cutlery required.
