Their crunch comes from a brief boil before baking, the same technique used for pretzels and bagels, just applied to a savory Neapolitan snack ring.

Taralli are small ring-shaped crackers made from flour, lard (sugna), black pepper, and toasted almonds, briefly boiled then baked until hard and golden. Market vendors and street carts sell them by the bag as an everyday snack.

Why it's made this way: Lard and almonds were affordable, calorie-dense ingredients for Naples' working population, and boiling before baking made the dough keep for weeks.
