The ham is baked wrapped in bread dough seasoned with pepper, bay leaf and mustard, and in Trieste it is almost never served without freshly grated horseradish (kren).
Thick, warm slices of ham baked in a bread crust, served at the counters of Trieste's buffets on a plate or in a roll with kren as a rebechin (snack).
Why it's made this way: Trieste's tourism board calls it the city's symbol at table, and it is the centrepiece of the buffet tradition shaped by Trieste's Austro-Hungarian past.
