Bite into one and pull the center apart — a stretch of melted mozzarella pulls into strings, which is why Romans nicknamed the classic version 'suppli al telefono,' or 'telephone-wire suppli.'

Suppli are oval croquettes of tomato-sauced rice wrapped around a core of mozzarella, breaded and deep-fried until the shell turns deep golden and crackling. Rome's fry shops and pizzerias sell them as a starter or snack, often alongside sliced pizza.

Why it's made this way: Suppli grew out of Rome's tradition of frying leftover rice, and the tomato-based filling and mozzarella center are what distinguish it from Sicily's saffron-and-ragù arancini.
