Trapizzino

It was invented in 2008 by a single Roman pizzaiolo, Stefano Callegari, making it one of the few Italian street foods with a known birth year and inventor.

A trapizzino is a triangular pocket of soft, airy pizza bianca dough, sliced open and stuffed with slow-cooked Roman dishes like braised oxtail (coda alla vaccinara), chicken cacciatora, or eggplant parmigiana. Rome's trapizzino shops fill them to order and hand them over wrapped in paper.

Why it's made this way: It was designed to turn classic Roman trattoria dishes, normally eaten with a fork, into something that could be eaten standing up on the street without losing the flavor of the original recipe.
