Unlike a piadina it is made with eggs and pepper, and the lard-brushed dough is rolled up on itself before being flattened, which gives it flaky layers.

A thin, layered griddle bread folded around sausage, wild greens, prosciutto or cheese and sold hot from focaccerie as a street snack.

Why it's made this way: It is the flatbread of Urbino and the Montefeltro area, listed as a traditional product of the Marche as crescia fogliata.
