It's served in layers that aren't meant to be stirred together — espresso, drinking chocolate, and cream are meant to be sipped through gradually, tasting different with every sip.

Bicerin layers hot espresso, melted dark chocolate, and lightly whipped cream in a small glass, served without mixing so each sip changes. Turin's historic cafés, some dating to the 18th century, still serve it exactly as it was invented.

Why it's made this way: It evolved from Turin's earlier 'bavareisa' drink and became the city's signature café order by the 1800s, reportedly enjoyed by figures from Alexandre Dumas to Turin's own aristocracy.
