The shell was originally fried around a piece of cane (canna), which is where the name comes from, before metal tubes replaced it.

Cannoli are crisp, fried pastry tubes filled to order with sweetened fresh ricotta, often studded with candied fruit, pistachios, or chocolate chips. Palermo's pastry counters and market stalls fill them only at the moment of sale so the shell stays crunchy.

Why it's made this way: The dessert traces back to Sicily's Arab-influenced pastry traditions and Carnival sweets, and became one of the island's most recognizable exports worldwide.
