Along the Tuscan coast, bakers fry fresh batches through the night so beachgoers can buy them still warm at dawn.

Bomboloni are round, deep-fried yeast doughnuts rolled in sugar and typically filled with pastry cream, Nutella, or jam. Tuscan bakeries and seaside kiosks sell them fresh through the morning as a grab-and-go breakfast.

Why it's made this way: The fried doughnut has roots in Tuscan and Central European frying traditions, and became a fixture of Tuscany's beach towns, where kiosks fry them to order for vacationers each summer.
