It's a close cousin of Florence's famous lampredotto sandwich but uses a completely different stomach chamber — trippa is honeycomb tripe, not the abomasum — so regulars can taste the difference.

This sandwich piles slow-simmered beef tripe in a tomato-and-herb broth into a crusty roll, often dipped bun-first into the cooking liquid before serving. Florence's historic tripe carts (trippai) ladle it out from steaming pots on street corners.

Why it's made this way: Tripe was cheap, plentiful offal in a beef-heavy Tuscan economy, and street vendors built a whole market-food tradition around simmering it slowly for hours.
