Arvoltolo

Around Orvieto it's called tortuccia and around Gubbio brustengo, and the same disc is eaten salted with cured meats or sugared as a sweet.

A disc of flour, water and oil pricked with a fork and deep-fried until golden, served hot with salt and cured meats or with sugar. It is the star of summer sagre around Perugia.

Why it's made this way: It is an old dish of peasant cooking in the province of Perugia, with summer festivals dedicated to it in villages such as Migliano, Olmeto and Castel Giorgio.
