Aperol Spritz

Aperol Spritz — street food from Veneto, Italy

The spritz is older than Aperol: the name is usually traced to Austrian soldiers in 19th-century Veneto, who had local wine 'spritzed' with water to lighten it.

The Aperol Spritz mixes the bitter-orange aperitivo with prosecco and soda over ice, garnished with an orange slice. It's the defining pre-dinner ritual across Veneto's piazzas and canal-side bars.

Why it's made this way: Veneto invented both halves of the drink — Aperol in Padova and prosecco in the nearby hills — making the spritz a distinctly regional pairing before it became a global bar staple.
